We had a headachey day, so this post is short but deliciously sweet.

Honey Pecan Baked Apples (serves 2-4)

Ingredients
2 baking apples (I love Braeburn, as always, but use your favorite)
1/2 C chopped pecans
1 Tbsp packed brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 C honey
1/4 C water

Directions
1. Preheat oven to 375 degrees F.

2. In a small bowl, combine dry ingredients, then mix in nuts, honey, and water.

3. Wash apples and remove core, leaving bottom of apple intact/solid. Use a small spoon to hollow out a small portion of the center of apple. Peel decoratively.

4. Place apples upright in a deep baking pan, baking dish, or ramekin. Stuff each apple with the honey-pecan filling, and drizzle remaining on the outside of the apples & in the pan/dish. Cover with foil and bake 45 minutes.

5. Serve warm or cold (both are delicious). This goes very well with yogurt, vanilla ice cream, ricotta cheese, or by itself. (Personally, I like it with a dallop of whip cream, Bebe loves a small portion with ricotta cheese, and Mr. P likes it plain).
